Today we’re wishing the D litter vom Mathenhaus a very happy birthday! That’s right, Danni turned 3 years old today. In celebration, I made some pumpkin muffins for the dogs from a neat cookbook I have called The Organic Dog Biscuit Cookbook. They turned out great and both Danni and Conan seemed to thoroughly enjoy them!! It’s a super easy recipe, and although I’m no pro baker (that would be the extremely talented Natalya Zahn over at Oscar Ate My Muffin), they were super simple and apparently super tasty! They’re even a nice healthy treat for the pups too. If you’re interested, here’s the recipe:
2 c. oat flour
2 tsp. baking powder
2 tsp. cinnamon
1/2 tsp. baking soda
1/2 tsp. ground cloves
3/4 c. honey
1/4 c. safflower oil
1 15-oz. can pumpkin (or fresh pureed pumpkin)
Preheat oven to 350 degrees. Combine all ingredients together and mix thoroughly. Place cupcake papers into a mini muffin pan (or a regular muffin pan). Spoon mixture evenly into the papers close to the top of the papers (the mix will not rise very much).
Bake 10-15 minutes if using the mini muffin pan or 22-27 minutes if using a regular muffin pan. Muffins are done when a toothpick inserted into the center comes out clean. Remove from the oven and let cool completely on a wire rack. Store in an airtight container in the refrigerator.
